Our Wine

Our domaine of 10 hectares of vines, produces only wines of the Mercurey appellation. We have for ambitions to extract the best of the appellation by producing quality wines to the tastes and the flavors which reflect their traditional grape variety
 
Vinification side, we attach a great importance for the choice of the date of the grape harvests. Indeed, a healthy harvest announces a quality vintage wine. That is why, we are being vigilant on the sanitary state of our grape, their ripeness, and all the vine works realized of the pruning at the harvest.

All our vineyard are harvested by thirty pickers.

Red wine making process :
- grapes sorting at the vines
- cold maceration during 15-20 days
- alcoholic fermentation
- pressing then settling during 48 hours
- put in oak barrels
- ageing
- racking
- bottling
 
White wine making process :
- grapes sorting at the vines
- pressing
- settling during 24 hours
- put in oak barrels for begins the alcoholic fermentation
- ageing
- racking
- bottling
